They are great for breakfast or a light lunch. I often use what's in my fridge a lot of the time! This recipe is easy to modify or substitute with other ingredients you may have on hand or prefer like red peppers, celery and other leafy greens!
INGREDIENTS
1.5 C water 1 chopped tomato 1 chopped cucumber 1 C baby spinach 1 clove garlic (more to taste) 1/2 medium avocado juice of 1 lemon or lime sea salt to taste a few sprigs of basil, parsley or cilantro to your taste
Blend all ingredients until smooth. Add more water to desired consistency. Adjust seasonings to taste.
