There are a few salad recipes that I love to make regularly, and this is one of them!
This avocado egg salad recipe is bursting with flavor and you will want to make it often!
It’s easy to make and a low carb choice you are following a lower carb meal plan.
Also a great meal prep dish!
This is a perfect lunch or side dish… my favorite? Butter lettuce wraps!
This recipe uses simple ingredients that you probably already have in your refrigerator.
INGREDIENTS
1 Large avocado (pitted & diced)
3 Large hard boiled eggs
2 Tbsp mayonnaise
1 Tbsp fresh lime juice
1 Tbsp minced fresh chives
Salt & pepper to taste
INSTRUCTIONS
1. Add the ingredients to a bowl & mix
2. Season with salt & pepper
3. Top with another splash of fresh lime juice or extra chive
OPTIONAL TOPPINGS
Add fresh dill
Add fresh bacon bits
Parsley or cilantro
Jalapeno peppers
Minced celery
Red chili flakes
* I use the sugar free Primal Kitchen Avocado Oil Mayo.
Store in an airtight container for up to 5 days. The avocado will keep it’s color and texture because of the lime juice!
